Menu 1/4/2015

  1. slow cooker chicken cacciatore, roasted potatoes
  2. sticky coconut chicken, rice, stir fry veg
  3. potato hamburger helper x2, plus mushrooms
  4. chicken with creamy mushrooms and snap peas, rice
  5. top round roast beef, horseradish sauce, lettuce, tomato, red onion, bread from Panera?
  6. G&A out, L fends for himself

This is a chicken heavy week for us, which is pretty rare these days.  But I kept finding chicken (recipes that looked good.  The (recipes are also a bit unusual since two of them use chicken thighs, not something I normally cook with but I’m working on trying to use them more than breasts.  The meat is moister and easier for me to eat.  

A and I will be heading out of town for the weekend and spending time at a cabin in the woods.  Dinners will be vegan so that we can eat dinner with my vegan bff who will also be going!  We haven’t planned meals yet, but I’m looking forward to it.
