Finally meal planning again.  Sheesh.  I’ve had a challenging time of things during the month of March.  I’ve been back and forth to my parents’ house every week and I haven’t been cooking at home or meal planning at home.  I’m hopeful that the tide is turning and I can get back to those things now.  

The meal plan isn’t totally complete, but it’s a start and that’s better than nothing.

Menu 2/15/2015

Lots of doubling of (recipes this week since I’ll be out of town and want to do my best to make sure the guys have plenty of food to eat while I’m gone.  I’ve also had some challenging days recently, so cooking larger amounts on the days that I can cook seems wise.  

I’ve got a ton of spinach that I need to use which is why I’ve planned meals 2 and 3.  Whatever doesn’t get used in those (recipes will get frozen for another time, since I think we’ll be sick of spinach by then.  

I’ve been going through my old recipe posts for meal planning inspiration recently, it’s been fun and it really makes me want to get back to posting (recipes!  I need to make this a Friday evening thing during our Family TV Night since it’d keep my hands busy but not be super distracting.

Art asked to grill this week, so we’re hoping that the forecast will hold true for Wednesday’s dinner to allow for that.  Grilling in the cold, and even dark, is one thing, but when there’s snow and rain?  Nope!  So I try to plan grilling nights around the weather when possible.  

Some new (recipes this week, some old (recipes too, hopefully it’ll be tasty stuff.

Menu 2/1/2015

Art is out of town for the first part of the week which means I’m cooking ALL THE FISH.  Very exciting.  Lance and I love fish.  Yum.  Sadly it’s also all the rice, but oh well, sometimes that’s the way meal plans turn out.  I tried to replace one of the instances of rice with pasta or potatoes, but it just didn’t seem like it would work with any of the (recipes.  Good thing Lance loves rice, eh?

Menu 1/25/2015

I missed cooking a meal last week since I was feeling unwell, so meal 1 is a holdover from last week’s meal plan.  I’m realizing that this is a pretty rice heavy meal plan, but last week we had a lot of pasta so I don’t feel too bad about the prevalence of rice this week!  This week we’ll be revisiting some old favorites that we haven’t had in way too long.  

Next week Art will be out of town for the first time in forever, so I’ll be cooking ALL THE FISH.

Menu 1/18/2015

I don’t have the entire week planned out yet because it’s pretty late Monday night and I need to go shopping tomorrow.  I figure that I’ll just shop for the meals I have planned and plan the other two nights once I have more time.  I don’t want to take the time right now to figure out what meats there are to use up from the freezer and all that jazz!

I’ve got a lot of veggies in the house that I had taken to the cabin in the woods for hummus dippers.  We didn’t use all of them, so I’m going to stick them in a stir fry for dinner tonight.  Yay for repurposing things.  Otherwise, I’m still plugging through meats in the freezer.  I’ve got some meat labeled “beef cubes” so I’ll be using those for meal #3.  Then I’ve got ground lamb, ground beef, and steaks.  I’m hoping for a at least one night with no precipitation so that Art can grill.

Menu 1/4/2015

This is a chicken heavy week for us, which is pretty rare these days.  But I kept finding chicken (recipes that looked good.  The (recipes are also a bit unusual since two of them use chicken thighs, not something I normally cook with but I’m working on trying to use them more than breasts.  The meat is moister and easier for me to eat.  

A and I will be heading out of town for the weekend and spending time at a cabin in the woods.  Dinners will be vegan so that we can eat dinner with my vegan bff who will also be going!  We haven’t planned meals yet, but I’m looking forward to it.

Menu 12/28/2014

7. Appetizer Day – spinach artichoke dipnacho dip, black bean hummus, polenta trianglessausage balls, various crackers and chips as needed

This isn’t a complete meal plan yet, I just needed to get a few nights planned so we don’t have to eat out for the first part of the week!  Lots of simple meals and we’ll be taking dessert for Taco Night on New Year’s Eve.  

I can’t believe this is the last meal plan for the year!  I’d like to say that I’ll be better about blogging and actually getting (recipes posted in 2015, but I’m not going to make promises that I can’t keep.
